Rob says: It’s relatively exceptional to find good natural processed coffee in Colombia. It’s also relatively difficult to lay your hands on fresh high altitude specialty microlots from Huila. With this BOMBA DE FRUTA we catch two birds with one stone.
A word on the drying process for this ‘Natural’ lot: Drying the whole cherry rather than parchment takes much longer. Drying in Huila is a big challenge due to rain and high humidity. During drying the producers hand sort the parchment coffee for impurities and defects. By receiving premium payments, the producers can improve their facilities, by building new or reconstructing the dryers to increase ventilation and potentially add shade nets to slower drying, and hence improve the quality and longevity of the coffee.
