Rob Says: LADY POWER! Time for real a specialty coffee out of Brazil, called Rosimeire. Female coffee farmers who are paying a lot of attention to harvest and processing; it’s becoming a trend.
Rosimeire processes her coffee washed or natural with, or without, aerobic fermentation. The coffee here is processed as a Natural, which means the whole cherries are dried. However in the case of this lot, there was some cherry fermentation before drying. This is when the cherries are picked and kept for some hours before starting the drying process, in this case the cherry where fermented for 72 hours in boxes, under water before being dried.
It’s the first time ever I buy a Specialty lot from this area, North-West of Brazils biggest city and also province name Sao Paulo.
